The chiller shall cool foods through the temperatures between 140�F and 40�F (60�C and 4��C) in 60 to 125 minutes. Some products may chill in considerably less time since speed of chilling depends on several variables, including food product's density, moisture content, specific heat, and containerization. For example, cookies have been chilled from 280�F to 45�F (138�C to 7��C) in three minutes. Time/Temperature Chill down meets all FDA and state regulations.

Metal-clad panels incorporate four-inch (102mm) thicknesses of Poured-in-place foam insulation - blown with a Zero Ozone Depletion Potential (0 ODP) Blowing agent - Enovate3000, by Honeywell.

The hinged Blast Chiller Door is of a construction matching that of the wall panels, measuring 36" x 78" (914 x 1981mm) to meet the requirements of the 1992 Americans with Disabilities Act.

All electrical systems are interconnected by color-coded plug-in quick connectors between control panel and internal operating systems for ease and speed of installation.

Any and all kitchen racks, including Combi-Oven racks, fit into the chiller.
